MANUFACTURER'S ADVICE
Considered a wine par excellence for the whole meal. It finds a natural accompaniment with traditional Veronese first courses, such as bigoli with donkey stew, risotto with tastasal and tortellini with hare sauce. Excellent with seared carne salada, baked quails with crispy bacon or spitroasted pigeons. To try with the typical dish of the Veronese tradition: boiled meat and pearà.
VINIFICATION
careful harvesting of the grapes, destemming and pressing. After a short cold maceration, fermentation takes place at a controlled temperature. First délestage and then pumping over are carried out to obtain a wine with good structure and spiciness. The maturation continues in stainless steel tanks for at least six months before being bottled.
ORGANOLEPTIC CHARACTERISTICS
Shiny ruby red colour. Delicate and persuasive aroma of small fruits, cherries and red currants, accompanied by a light spiciness, white pepper. The taste is crunchy, elegant, with notes of rhubarb root and cloves. Dry with fine and intriguing tannins.
