MANUFACTURER'S ADVICE
Recommended as an aperitif and on all occasions
of conviviality.
It pairs well with all dishes, both meat and fish, as long as they are not too
elaborate. Try it in combination with poké.
VINIFICATION
Charmat-Martinotti method sparkling wine. The grapes are
harvested, destemmed, pressed and delicately pressed. Accurate cleaning
of the musts. The preparation of the base wine takes place with a low
temperature fermentation in order to obtain a fresh and very expressive
wine. Brief refinement in stainless steel tanks before starting the secondary
fermentation in the autoclave. Slow refermentation and rest on the fine lees
for at least 90 days, to favor a fine, elegant and persistent perlage.
ORGANOLEPTIC CHARACTERISTICS
Light straw yellow, bright and brilliant,
subtle and persistent perlage. The nose is intense with hints of white flowers
and hints of not too ripe green apple.
On the palate it is intense with a pleasant structure and freshness.
Slightly mineral and dry finish enhanced by the reduced sugar content.

The grapes come from the property’s own vineyards, trained in
espalier - 5,000 vines/ha
