MANUFACTURER'S ADVICE
Ideal and almost unsurpassable as an aperitif and on light appetizers, pasta or rice first courses, tortellini.
It goes well with meat carpaccio, fish and grilled vegetables.
Perfect pairing with a black angus tartare with Monte Baldo truffle.
VINIFICATION
the grapes are vinified separately. Once destemmed and pressed, a soft pressing is carried out. We proceed with careful cleaning of the musts, followed by alcoholic fermentation at a controlled temperature.
Resting on the fine lees in stainless steel tanks for a few months. Only at the end of this maturation is the Custoza blend made.
ORGANOLEPTIC CHARACTERISTICS
At sight it has a bright straw yellow color with greenish reflections.
Very elegant nose: white pulp fruit, pear, citrus fruits, peach.
With a mineral and delicate, enveloping, glycerine flavour, on the delicious expression of the fruit.
GRAPES AND PERCENTAGES
Garganega 30% Trebbiano 30% Trebbianello
(Tai) 15% Bianca Fernanda (Cortese) 15%, Incrocio Manzoni 10%.
VINEYARDS
all the grapes come from the property’s vineyards. The vineyards are cultivated in the most suitable areas of the denomination, different in altitude, exposure and microclimate. Only the union of this fantastic territory allows us to obtain the “Custoza Albino Piona”. Espalier training – 5,000 vines/ha.
