Azobè is a Verona red with great structure. The name derives from the typical wooden poles that once supported the vines. This type of exotic wood, coming from the African equatorial area, is very resistant and ensures that adverse weather conditions do not ruin it over time.

MANUFACTURER'S ADVICE
Structured wine, ideal for accompanying second
courses such as stewed hare, roasts and grilled meat. To be tried with dried
fruit during after-dinner conviviality.
VINIFICATION
A part of the Merlot grape is harvested manually in small
houses for drying for 30 days. The other grapes are selected, destemmed
and not pressed. They are combined with the overripened Merlot in the
fermenters for the red grapes. After a long maceration, the fermentation in
the first phase takes place at a low temperature, before increasing it in the
last phase and favoring maximum extraction of aromas, tannins and color
intensity. We continue with repeated délestage and pumping over in order
to obtain a complex and structured wine. Aging takes place in French oak
barrels for at least twelve months before being bottled. Refines for at least
six months in glass.
ORGANOLEPTIC CHARACTERISTICS
Intense ruby red color with violet
reflections. Complex aroma: ripe red fruits, cinnamon, liquorice and balsamic
notes can be recognized. The taste is intense and enveloping. The fruit, still
very present, is balanced by the sweet and still evolving tannin.
