CAMPO DEL SELESE
Campo del Selese is the Custoza Superiore. In the peasant tradition, the
“selese” was a small place paved with terracotta bricks, located inside the
farmyard, strictly exposed to the sun all day, where the cereals were dried for
the winter. Campo del Selese was originally called the field dedicated to the
production of this wine, near the Selese area.

MANUFACTURER'S ADVICE
Excellent with pumpkin tortelli and all those dishes
where a structured white is required. We recommend trying it with grilled fish
or daring with a grilled fillet. Delicious with truffle-based dishes.
VINIFICATION
careful harvesting of the grapes. Once destemmed and
pressed, a soft pressing is carried out. We proceed with a careful cold
decantation of the musts, followed by alcoholic fermentation at a controlled
temperature in stainless steel.
A part of Garganega ferments in French oak tonneaux, to then be combined
with the other varieties and left on the fine lees for at least 12 months. Aged
for a minimum of 6 months in glass.
