Estro di Piona Rosè

In our winery, we do follow all the transformation steps of our grapes. So, sparkling wine making is a processing we are committed to with all our passion and know-how as well.
For our sparkling wine line Estro di Piona rosè, we have decided to use two native red berry vines, Corvina and Rondinella, white vinification, harvested at the right point of ripeness only.
We are proud of the label enriching this peculiar sparkling wine, designed in cooperation with an artist and calligrapher, Anna Schettin.

Sparkling wine, Martinotti-Charmat method.
Red grapes are harvested and lightly pressed. The light pink must undergoes a low temperature fermentation to get a fine and very fragranced base wine. Then a short refinement in stainless steel tanks follows before the secondary fermentation in autoclave.
Slow refermentation and on its lees for some months to enhance its fine and persistent perlage.

It goes well with light dishes, excellent with sea and lake fish as well, crudités, sushi and fried food.
